1) Weigh the meat. I got the best results using 5-6 oz. of beef per burger. 2) Use well chilled meat. This helps to keep the meat from sticking. 3) Press the ground beef into the bottom and flatten it out a bit before pressing. It takes a couple of extra seconds, but it does make perfectly even and consistent patties with very little effort.
