On my second attempt, I used russet potatoes and yams and set the mandoline on the thickest slice setting. I also didn"t cut as fast as I did before so that I have more control of my downward strokes. The result was perfect slices! I fried the chips this time in an enameled cast iron dutch oven at 350 degrees. Took around 3-4 minutes to crisp up.
